Afternoon Pick-Me-Up

Author: G /

I was feeling a bit "blah" this afternoon... running online errands, watching tv and basically lounging around.  I felt that little voice inside of me say "Workout!  Make yourself a salad!"

"No!" I replied, but finally I gave in and thought I'd share a recipe for a healthy afternoon pick-me-up that you may enjoy...

I started with a 20 minute Yoga video followed by a 10 minute upper-body burn (both courtesy of my new favorite workout hub, www.exercisetv.tv).  Then I went into the kitchen and threw together a delicious salad with greens from our local CSA (find local agriculture in YOUR community at www.localharvest.com).

My greens this week were Pizzo and Persian Cress which are both spicy lettuces and great for the metabolism.  I chopped off the stems and threw them into my bowl, along with a healthy shake of Wheat Germ which is a great source of fiber, vitamin E, zinc magnesium and more.  The nutty flavor is perfect and unobtrusive.  I added a few Raisins for flavor and four thin slices of Organic White Cheddar.  Next I used two of my favorite Salad Spritzers (only 1 calorie per pump), Newman's Own Italian and Wishbone Ranch.  A Grapefruit half (great for digestion) was a nice addition with a squeeze of Agave Nectar instead of honey.  Read about Agave benefits HERE.  Lastly, I always keep a lemon around for my salads, water, chicken and lots more.  I gave the lemon a good twist into my salad and then into a tall glass of water.  Lemon is a wonder-fruit with benefits like Liver-stimulation, Potassium which nourishes the brain and nerve cells, Calcium for your bones, Asthma relief, heartburn relief, weight-loss as it helps give you energy from the food you eat, and much more!  So squeeze a lemon into a glass of water twice a day!  You'll be amazed at the results!

This is a delicious and healthy salad that is super easy to whip up.  Just remember to steer clear of non-organic and Iceberg lettuce.  Pesticides are a huge danger to our generation and Iceberg lettuce is just plain bad for you.  Here at Galeotti's we serve Organic mixed greens and Romaine, and our meat is getting an upgrade, too!  Free-Range, Hormone-free, All-natural chicken and beef is coming your way at 801 E. Main St.

Hope this helps you next time you're feeling in a slump.
Ciao, Bethany J. Galeotti

Thanks for sharing these pointers. I've been feeling a bit "blah" lately with this rather warm weather we're having also so i shall have to follow your example... haha.
But my favorite thing about this nice weather is our fun farmers market, especially at the new battle ground plaza, and getting a bunch of fresh fruits and veggies!

thanks for the great tips.

My friends from Costa Rica made my family a great dinner, when they were at our house and they put lemon on the salad and it was delicious!

Joy I wanted to start off saying I think you are absolutely fabulous :) And have so many talents! I'm so glad you're sharing all of this with us! You are really inspiring me to get my butt up off the couch (or computer in this case lol) and get out there! Being in college is tough for eating habits! But this blog is an awesome way to get some easy pointers :)

I just wish I didn't live so far! I'd love to come try the new restaurant! I'm 100% Italian so I KNOW it'll be delicious! :) Best of luck on your new journey!

Thanks for all the wonderful tips and the wesbite information. The salad that you made sounds delicious and filling. I'll definitely be trying it this weekend.

I love reading your blog posts about what's going on with the restaurant and wish that I didn't live in San Diego so I could come partake of the wondeful food and the warm environment. I might just have to make a special trip to Battle Ground one of these days.

Hi Bethany!

I just wanted to know if you are going to be performing at any other times after the Grand Opening of Galeotti's? I would love to hear Everly play, but I cannot make it on July 25th because I will actually be at a horse show (one thing that we have in common :]). I am such a big fan of your work and I absolutely love your music. Thanks so much for opening a local restaurant that will be supporting local and sustainable foods. I live on an organic farm in Hockinson, not too far from Battle Ground, and I can truly say that I appreciate your efforts to bring awareness to our community.
